Preheat oven to 350F. Spray one 9×5-inch loaf pan with floured cooking spray, or grease and flour the pan; set aside.
To a large bowl, add the first eight ingredients, through vanilla, and whisk or beat to combine well.
Add the flour, baking powder, baking soda, salt, and fold with spatula or stir gently with a spoon until just combined; don’t overmix.
Fold in the grated apple and chocolate chips gently to combine.
Turn batter out into the prepared pan, smoothing the top lightly with a spatula.
Bake for 45 minutes, then add tented foil to cover the pan to prevent over browning. Bake for another 15-20 minutes, or until golden brown and the center is set. Insert a toothpick to the center to see if it comes out clean.
Allow bread to cool in the pan for 15 minutes before turning out onto a wire rack to cool completely. Once cooled, slice and serve.
