Ingredients
    Chicken
  • 4 Large Chicken Breast (boneless, skinless)
  • 2 tbsp Olive Oil
  • 2 tbsp Balsamic Vinegar
  • 3 clove Garlic (minced)
  • 1 1/2 tsp Italian Seasoning
  • Salt & Pepper (to taste)
  • Nonna Pia's Balsamic Reduction (from local grocery store)
  • Bruschetta
  • 1 1/2 cup Tomatoes (Roma, Cherry or Grape) (diced)
  • 1/2 cup Fresh Basil (chopped)
  • 3 clove Garlic (minced)
  • 1 tbsp Balsamic Vinegar
  • 1 tsp Olive Oil
  • 1/3 tsp Kosher Salt
  • 1/4 tsp Black Pepper
  • 1 cup Feta Cheese
Instructions
  1. Toss all ingredients for the bruschetta, except for the feta cheese. Refrigerate mixture for 1-2 hours to let the flavors combine.

  2. Marinade the chicken breast with olive oil, balsamic vinegar, garlic, Italian seasoning, salt & pepper for 1-2 hours.

  3. After the chicken has marinated, grill until cooked through.

  4. Top chicken with bruschetta, feta cheese and balsamic reduction. Serve immediately.

Note

This can be good as a main dish on it's own, or put on top of a salad.
