Boston Pizza Southwest Potato Skins

Ingredients
    Potato Skins
  • 8 Medium-Large Red/Yellow Potatoes (quartered lengthwise)
  • Salt & Pepper (to taste)
  • 2 tbsp Olive Oil
  • 1 cup BBQ Sauce (Kraft Original)
  • 1/2 cup Honey
  • 3 Chicken Breast (cooked and shredded)
  • Bacon Bits
  • Double Cheddar Cheese (shredded)
  • Garlic Sauce
  • 3/4 cup Mayonnaise
  • 1/4 cup Parmesan Cheese (shredded)
  • 1 tbsp Olive Oil
  • 2 tbsp Lemon Juice
  • 2 clove Garlic (minced)
  • 1/2 tsp Garlic Powder
  • 1/2 tbsp Parsley Flakes
Instructions
  1. Boil and shred 2-3 chicken breasts. Put to the side.

  2. Wash & quarter each potato. (You can either cut a portion of the middle part before baking, or bake your potatoes then scoop part of each center out to make room for your toppings).

  3. Toss your potatoes with olive oil, salt & pepper (to taste). Lay the potatoes, skin side down, on a baking tray, with parchment paper. Bake at 425 F, for 35 minutes or until your potatoes are soft when you poke a fork through them.

  4. While the potatoes are baking, mix all ingredients together for your garlic sauce. And put in the fridge until you are ready to serve.

  5. In a small bowl, combine 1 cup BBQ sauce, and 1/2 cup of honey. 

  6. When potatoes are finished baking, brush each potato with the bbq mixture. Pour the remaining bbq sauce into your shredded chicken and mix until well combined.

  7. Finish topping your potatoes with the shredded chicken, bacon bits and shredded cheese. 

  8. Put the completed potatoes back in the oven for 5 minutes, or until the cheese has melted.

  9. Drizzle each potato with garlic sauce and serve while hot.
