California Chicken Burger with Garlic Aioli

Ingredients
    Grilled Chicken
  • 4 Large Chicken Breast (boneless, skinless)
  • 1/3 cup Olive Oil
  • 3 tbsp Lemon Juice
  • 3 tbsp Soy Sauce
  • 2 tbsp Balsamic Vinegar
  • 3 clove Garlic (minced)
  • 1 tsp Garlic Powder
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • Garlic Aioli
  • 3/4 cup Mayonnaise
  • 3 clove Garlic (minced)
  • 1 1/2 tbsp Lemon Juice
  • 1/2 tsp Garlic Powder
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper
  • Toppings
  • 4 Brioche Buns
  • Unsalted Butter
  • 8 Slices Bacon (cooked until crispy)
  • 4 Slices Medium Cheddar Cheese
  • 2 Avocados (sliced)
  • 1 Tomato (sliced)
  • Butter Lettuce
  • 1/4 Red Onion (sliced)
Instructions
  1. In a bowl stir all of the ingredients for the Grilled Chicken. Pierce chicken breasts with a fork all over. Place the chicken in a large Ziploc bag and pour the marinade over the chicken. Place into the refrigerator and let it marinate for 4-5 hours.

  2. Preheat a grill over medium heat. Brush grill with oil, and place the marinated chicken on the grill. Cook for approximately 5-6 minutes, per side, until fully cooked. Remove from the grill and allow to rest for 5 minutes.

  3. Cook bacon until crispy. Set aside.

  4. Mix all ingredients for the garlic aioli in a small bowl. Put in the refrigerator until ready to use.

  5. Butter the inside of each Brioche Bun, and grill for 1-2 minutes until golden brown.

  6. Once your chicken, brioche buns, bacon, and garlic aioli are ready, finish slicing any remaining toppings. Assemble your burgers with desired toppings. Serve immediately.
