Add olive oil and chopped chicken to a pan over medium-high heat. Sauté chicken until cooked and golden brown.
Add all seasonings, hot sauce, lime juice and tomato sauce to the chicken mixture. Combine well.
Reduce heat to medium-low and allow to simmer for 2-3 minutes. Take off the heat and set aside.
In a small bowl, combine the sour cream, lime zest, lime juice, and salt & pepper. Mix well to combine, and place in the refrigerator until ready to use.
Turn your oven on to Broil.
Assemble a baking sheet with some parchment paper.
Divide chicken mixture among the 10 tortilla wraps. Add chicken mixture to the middle of each tortilla and add cheese. Roll tortilla's tightly, then arrange them on the baking sheet seam side down. Sprinkle more cheese over top of each tortilla on the baking sheet.
Broil in the middle of the oven for 2-4 minutes, or until the cheese is melted and the tortillas are golden brown. Keep a close eye on the flautas so they do not burn!
Remove from the oven and serve immediately with the lime crema.
Adjust red pepper powder and hot sauce to your desired degree of spiciness. If you do not like heat, eliminate both ingredients.
