Goddess Dressing

  1. In a small bowl add mayonnaise, yogurt, basil, parsley, chives, lemon juice, garlic, and salt & pepper. Refrigerate until ready to use.

Chicken

  1. Mix all ingredients for chicken marinade. Add chicken. Marinade chicken for 1 hour (up to overnight). 

    Cook chicken: Grill chicken using an indoor grill (7 minutes), or using a BBQ (6 minutes per side), until chicken is cooked.

Roast Veggies

  1. Preheat oven to 425° F. On a large baking sheet, toss veggies with oil, garlic and season with salt and pepper. Bake until the veggies are roasted, approximately 30 minutes.

Assemble Bowls

  1. Divide rice between 4 serving bowls. Top with chicken, roasted veggies, and avocado. Drizzle dressing over each bowl. Serve immediately.
