Chicken Goddess Bowls

Ingredients
    Chicken & Marinade
  • 1 lb Chicken Breast (skinless, boneless)
  • 2 tbsp Extra Virgin Olive Oil
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1 tsp Garlic Powder
  • 1 tsp Dried Oregano
  • Vegetables
  • Veggies of your choice (I like to use a mixture of: red peppers, carrots, cherry tomatoes, zucchini, asparagus, broccoli, cauliflower)
  • 2 tbsp Olive Oil
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 2 clove Garlic (minced)
  • Goddess Dressing
  • 1 cup Mayonnaise
  • 1 cup Plain Greek Yogurt
  • 1 tsp Dried Basil Leaves
  • 1 tsp Dried Parsley
  • 1 tsp Dried Chives
  • 1/2 tsp Garlic Powder
  • 1/4 cup Lemon Juice
  • 2 clove Garlic (minced)
  • For the Bowls
  • 2 cup Cooked Jasmine Rice
  • 2 Avocados (sliced)
Instructions
    Goddess Dressing
  1. In a small bowl add mayonnaise, yogurt, basil, parsley, chives, lemon juice, garlic, and salt & pepper. Refrigerate until ready to use.
  2. Chicken
  3. Mix all ingredients for chicken marinade. Add chicken. Marinade chicken for 1 hour (up to overnight). 

    Cook chicken: Grill chicken using an indoor grill (7 minutes), or using a BBQ (6 minutes per side), until chicken is cooked.

  4. Roast Veggies
  5. Preheat oven to 425° F. On a large baking sheet, toss veggies with oil, garlic and season with salt and pepper. Bake until the veggies are roasted, approximately 30 minutes.

  6. Assemble Bowls
  7. Divide rice between 4 serving bowls. Top with chicken, roasted veggies, and avocado. Drizzle dressing over each bowl. Serve immediately.
