Preheat oven to 400 F.
Wash potatoes. Slice potatoes into circles, slightly thicker than potato chips
Toss potatoes in olive oil, salt, pepper, garlic powder and paprika.
Line 2 cooking sheets with parchment paper. Spray paper with nonstick spray.
Spread potatoes in 1 layer over both cooking sheets, and put into the oven for 30-45 minutes, or until potatoes are golden brown and cooked through.
Take potatoes out of the oven and top with cheddar cheese, bacon and green onions. Return the potatoes to the oven for 3-5 minutes, or until the cheese has melted.
Serve with sour cream.
