Maple & Bacon Baked Beans

Soak beans overnight in cold water.

In the morning bring to a boil. Reduce heat to med-low. Skim & simmer for 30 minutes.

Put beans in a bean pot or deep casserole dish. Bury onion and bacon into the beans.

Combine maple syrup, chili sauce, and all spices. Mix into the bean mixture.

Add boiling water to the beans to cover with about 1 inch liquid.

Bake beans covered, at 300 F for the first half hour.

Turn down to 250 F and continue cooking for 3 1/2 to 4 hours.
