Mediterranean Chickpea Salad

Ingredients
    Salad Base
  • 2 (15 oz) can Chickpeas (drained and rinsed)
  • 1/4 cup Red Onion (finely diced)
  • 1/2 cup Fresh Italian Parsley (chopped)
  • 3 Sweet Bell Peppers (colors of choice) (chopped)
  • 2 cup Mini Cucumber (chopped)
  • 1 cup Feta Cheese (crumbled)
  • Salad Dressing
  • 3 tbsp Extra Virgin Olive Oil
  • 3 tbsp Red Wine Vinegar
  • 3 clove Garlic (minced)
  • 1 1/2 tsp Dried Oregano
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
Instructions
  1. Chop and add all of the salad base ingredients to a large bowl.

  2. In a separate bowl mix the ingredients for the salad dressing. Toss dressing with the chopped vegetables. 

  3. Let marinade in the refrigerator for 1 hour. You can store this in an air tight container for 3 days.
