In a small bowl mix the spices together (cumin, paprika, cinnamon, salt, cayenne, garlic powder, and parsley flakes). Put to the side.
In a large bowl, shred the carrots. Add olive oil, lemon juice, garlic and the spice mixture. Mix well until fully combined.
Cover the bowl, place in the refrigerator and let it marinate for 2 hours to overnight. Once marinated, serve as a side dish cold.
