Roasted Root Vegetable Medley

Preheat oven to 350 F.

Peel, chop and wash all vegetables.

Toss vegetables with red onion, olive oil and seasonings. Put into a large roasting pan. Place knobs of butter over top of the vegetables.

Cover the roasting pan and roast in the middle rack of the oven for 90 minutes. Serve immediately.
