Roasted Root Vegetable Medley

Ingredients
  • 5 Carrots (chopped)
  • 5 Parsnips (chopped)
  • 1 Rutabaga (chopped)
  • 1 Large Sweet Potato (chopped)
  • 1 Red Onion (sliced)
  • 3 clove Garlic (minced)
  • Salt & Pepper
  • 1 1/2 tsp Dried Thyme Leaves
  • 1 1/2 tsp Dried Rosemary
  • 2 tsp Dried Parsley Flakes
  • 2 tbsp Olive Oil
  • 1/2 cup Butter (cut into knobs)
Instructions
  1. Preheat oven to 350 F.

  2. Peel, chop and wash all vegetables.

  3. Toss vegetables with red onion, olive oil and seasonings. Put into a large roasting pan. Place knobs of butter over top of the vegetables. 

  4. Cover the roasting pan and roast in the middle rack of the oven for 90 minutes. Serve immediately.
