Ingredients
  • 475 g Mascarpone Cheese (room temperature)
  • 2 cup Heavy Cream
  • 1/3 cup White Sugar
  • 1 tsp Vanilla Extract
  • 2 1/2 cup Dark Roast Coffee (brewed, and cooled completely)
  • 2 tbsp Dark Rum
  • 2 tbsp Dutch Cocoa Powder
  • 30 Lady Fingers (Savoiardi Biscuits)
Instructions
  1. Brew 2 1/2 cups of strong coffee. Place in a large dish, set it to the side, and allow it to cool completely.

  2. In a large bowl add the heavy cream. With a hand mixer on medium speed, whip the heavy cream until stiff peaks start to form (about 3-4 minutes). Place the whipped cream in the fridge until ready to use.

  3. In a separate large bowl, add the mascarpone, vanilla and sugar. Whip ingredients together until well blended.

  4. Take the whipped cream out of the fridge, and fold into the mascarpone mixture gently. Be careful not to overmix.

  5. To the cooled coffee dish, add 2 tbsp of dark rum.

  6. Grab a 9 x 13 glass baking dish, and assemble your mise en place.

  7. Spray the 9 x 13 glass baking dish. Dip each lady finger into the coffee mixture for a few seconds and layer the bottom of your pan. Once the whole pan is filled with soaked lady fingers pour half of the mascarpone mixture on top. Spread evenly over the lady fingers. With a fine sifter, sprinkle 1 tbsp dutch cocoa powder over the layer. Repeat the steps for the final layer.

  8. Cover and chill in the fridge for 4 hours to overnight before serving.

  9. Slice and serve with additional whipped cream, fruit or chocolate covered coffee beans.
