Saute' celery, carrots and onion in the 1/2 cup butter.
Mix all ingredients in a large bowl, except the broth.
Spray crock pot. Dump stuffing into the crock pot. Add turkey neck on top. Pour 2 cups of broth over stuffing. Cook on low for 3 hours, stirring every hour.
On the last hour, pour last cup of broth over stuffing.
