Description

A simple salad, great for lunch to help you get through the week! Full of all the right stuff, this one is a win for meal prepping!

Ingredients
    Salad
  • 8 cup Baby Spinach
  • 1 Apple (thinly sliced)
  • 1/2 cup Mushrooms (sliced)
  • 1/4 Red Onion (thinly sliced)
  • 1/3 cup Goat Feta (crumbled)
  • 1/4 cup Almonds (toasted, sliced)
  • Dressing
  • 1/3 cup Extra Virgin Olive Oil
  • 3 tbsp Apple Cider Vinegar
  • 1 tsp Honey
  • 2 clove Garlic (minced)
  • 2 tsp Dijon Mustard
  • Salt & Pepper (freshly ground)
Instructions
    Dressing
  1. Whisk all of the ingredients together in a small bowl. Set aside.

  2. Salad
  3. Add the salad ingredients to a large bowl. Toss with the prepared salad dressing. Serve immediately.

Note

MEAL PREPPING: You can divide the ingredients among 4 containers ahead of time for meal prepping. If you meal prep ahead of time, store the dressing in a separate container. Store salads in the refrigerator for 1-2 days.

Apples: Bring an apple to slice fresh at the time of eating you salad, or you can slice the apple ahead of time and dip each slice in a bowl of orange juice. This prevents the apple from browning overnight.
