Spinach & Feta Pork Patties

Finely chop the baby spinach. Heat a large non-stick pan over medium heat. Add the chopped spinach to the dry pan. Stir continuously until spinach wilts (1-2 minutes). Remove from the pan and set to the side.

In a large bowl combine the ground pork, panko crumbs, lemon pepper seasoning, lemon zest, garlic, feta, eggs and cooled spinach. Form pork into 10 patties.

Heat the same pan over medium heat. When hot, add oil and then the patties (you may need to cook them in batches). Fry the patties for 3-4 minutes on each side until browned.

Plate finished patties with rice and veggies. Squeeze a lemon wedge over top of the patties if desired.
