Ingredients
  • 8 tbsp Water
  • 4 tbsp Ketchup
  • 2 tbsp Soy Sauce
  • 4 tsp Cornstarch
  • 2 tsp Honey
  • 1/4 tsp Crushed Red Pepper Flakes
  • 1/2 tsp Ground Ginger
  • 2 tbsp Olive Oil
  • 1 Large Carrot (Grated)
  • 1 Red Pepper (chopped)
  • 1/2 cup Green Onion (sliced)
  • 8 clove Garlic (minced)
  • 400 g Raw Shrimp (peeled, tails removed)
  • Cooked Jasmine Rice
Instructions
  1. In a bowl, stir together water, ketchup, soy sauce, cornstarch, honey, crushed red pepper, and ground ginger. Set aside.

  2. Heat oil in a large skillet over medium high heat. Stir in red pepper, grated carrot, green onions and garlic. Sauté for 1-2 minutes. 

  3. Stir in shrimp and toss to coat with oil. Sauté shrimp until cooked (about 3 minutes). 

  4. Add the sauce to the same skillet. Cook and stir sauce is bubbly and thickened. Serve immediately over rice.
