Triple Berry Cobbler

Preheat oven to 350 degrees F.

First, make the topping by combining the oats, flour, sugar, brown sugar, cinnamon and salt. Stir to combine.

Pour in the melted butter and mix well. Set aside.

In another bowl add the frozen berries, flour, sugar, salt, lemon juice and vanilla extract and toss to combine. (Don't panic if it looks like there is a lot of excess sugar & flour, this will help to sweeten and thicken the berry sauce).

Pour mixture into an 8x8’’ or similar size casserole dish or pie plate. Spoon the topping evenly over the berry filling. Do not pack the topping, you want it to be loose over top.

Bake for 40-45 minutes until the topping is golden brown and berries are bubbling around the edges.

Remove from the oven, and allow it to cool for 5-10 minutes before serving. Serve with a scoop of vanilla ice-cream, if desired.

Cover leftovers and store in the refrigerator for up to 5 days.
Note
Frozen berries work better than fresh ones with this recipe, so I recommend you save your fresh berries for something else, and save your pennies by purchasing a bag of Frozen Triple Berries from your grocery store instead.
You can easily make this recipe Gluten Free by substituting the All Purpose Flour and Rolled Oats for a Gluten Free option. Both ways taste delicious!
If you are trying to get rid of some frozen fruit, you can substitute the Frozen Triple Berry mixture for just about anything. This recipe works well with strawberry peach, or any other combo you can think of!
