In a pan over medium heat, add avocado oil, turkey sausage, salt & pepper, and sauté until fully cooked and golden brown. Remove from the pan and set aside.
In a bowl, whisk together the eggs and milk. Set aside.
In a separate large pan over medium-high heat, add avocado oil, shallots, peppers and tomatoes. Sauté for 3-4 minutes or until softened. Add the egg mixture and baby spinach to the pan. Mix well with the veggies and add salt & pepper. Continue to cook in the pan until the eggs are fully cooked. Add the turkey sausage to the pan and mix with the egg mixture. Cook for another minute until ingredients are combined and heated through.
Split between 5 containers or bowls. If eating immediately, add chopped avocado and hot sauce (optional) to each bowl. If storing for later, top each container with hot sauce (optional), and bring a fresh avocado with you to cut up and add to the container at the time of eating.
To heat up at a later time, just place your container in the microwave for 1-2 minutes.
